Gung Hay Fat Choy! Happy Chinese New Year!
In honor of 2011 Year of the Rabbit,
one of the main ingredients are Carrots.

5) Valuable Part of a High Fiber Diet
Apple Carrot Honey Oats
Ingredients
1 Apple – Mashed or Puree (can substitute with Apple sauce)
2 Carrots – Shredded
3 Cups of Flour (use additional ~1 cup if needed)
1 Cup of Oats
1 1/3 Cups of Water
1/4 Cups of Vegetable Oil
1-2 Tablespoon of Honey
Combine and stir all the ingredients. Adjust flour and liquid as necessary to make stiff dough. Roll the dough on a floured surface. Cut it with a dough cutter. Place on ungreased cookie sheet (we always use silpat). Bake for 2 1/2-3 hours in 250 degree oven until thoroughly dry. For extra crunchy, leave the treats inside the oven to cool-off.
This recipe was created based on my mom’s favorite granola bar.
For this recipe, HONEY can be Absolutely Optional.
You have two options on how to include Honey in this recipe 1) mix it with all the ingredients OR 2) drizzle some on the last hour of baking (which is what we did).
